How to Cook Like a Chapin



"You started out having trouble, but you're learning." These were the words from my friend and ministry partner, Antony de Leon as he walked by the breakfast table this morning. Ah yea... authentic validation of my efforts!

I've been a connoisseur of omelets for years, but I've been envious of these little breakfast burritos made by Antony. Whenever I have a free morning lately, I've been in the kitchen trying to duplicate his methods, although my ingredients are bit more 'Merica influenced.

My first attempts resulted in  burnt tortillas, over-oiled sogginess, and tortillas that fell apart. Today was my best attempt yet. Here are my easy fried egg, bacon, onion, green onion, cheddar breakfast wraps.


Flour tortilla, local fresh egg, local veggies: onion, green onion, avocado,  microwave bacon
carried down by my parents from Kroger, and processed cheddar.

Shaping the tortilla with a bit of vegetable or olive oil on low heat.

Perfectly browned, crispy tortilla!

Plated and garnished with Franks Redhot Sauce!

Perfectly cooked egg... not runny, and not solid
Achievement unlocked!


Sometimes it's the little things in life that 
make all the difference!
