I've been a connoisseur of omelets for years, but I've been envious of these little breakfast burritos made by Antony. Whenever I have a free morning lately, I've been in the kitchen trying to duplicate his methods, although my ingredients are bit more 'Merica influenced.
My first attempts resulted in burnt tortillas, over-oiled sogginess, and tortillas that fell apart. Today was my best attempt yet. Here are my easy fried egg, bacon, onion, green onion, cheddar breakfast wraps.
|Flour tortilla, local fresh egg, local veggies: onion, green onion, avocado, microwave bacon|
carried down by my parents from Kroger, and processed cheddar.
|Shaping the tortilla with a bit of vegetable or olive oil on low heat.|

|Plated and garnished with Franks Redhot Sauce!|
